  • Yield: 8 servings 1x

Description

Enjoy a delicious Pecan Upside-Down Cake with a caramel-like topping of brown sugar and pecans. This moist, fluffy cake is perfect for any occasion, served warm or at room temperature, and pairs wonderfully with whipped cream or vanilla ice cream.

Ingredients

Scale
  • 1 cup pecan halves
  • 1/2 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or non-stick spray.
  3. Place pecan halves in a single layer at the bottom of the prepared cake pan.
  4. In a small bowl, mix melted butter and brown sugar until well combined. Pour this mixture over the pecans in the cake pan.
  5. In a large mixing bowl, combine granulated sugar and remaining melted butter. Beat until light and fluffy (2-3 minutes).
  6. Add eggs and vanilla extract, mixing until smooth and creamy.
  7. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  8. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Mix until just combined.
  9. Pour the batter over the pecan and brown sugar mixture in the cake pan, spreading it evenly.
  10. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  11. Let the cake cool in the pan for 10-15 minutes.
  12. Run a knife around the edges to loosen the cake, then invert it onto a serving plate.
  13. Allow the cake to cool for another 20-30 minutes on the plate.
  14. Slice the cake into wedges and serve warm or at room temperature.
  15. Serve with whipped cream or a scoop of vanilla ice cream for an extra special touch.
  16. Store any leftovers in an airtight container at room temperature for up to 3 days.

Notes

  • For a decorative touch, arrange the pecans in a pattern before pouring the topping mixture.
  • Be careful not to overmix the batter to ensure a light and fluffy cake.
