- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably Italian-style)
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder

- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup olive oil (for frying)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts with salt and pepper.
- In three shallow dishes, prepare:
- Dish 1: All-purpose flour.
- Dish 2: Beaten eggs.
- Dish 3: Breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper.
- Dredge each chicken breast in flour, dip in eggs, and then coat with the breadcrumb mixture.
- In a large skillet, heat olive oil over medium-high heat until hot.
- Fry the chicken for 4-5 minutes on each side until golden brown and cooked through. Drain on paper towels.
- Heat marinara sauce in a small saucepan over low heat.
- In a baking dish, place fried chicken breasts in a single layer and spoon marinara sauce over each piece.
- Sprinkle shredded mozzarella cheese over the chicken and sauce.
- Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly. Broil for 2-3 minutes for a golden top.
- Sprinkle freshly chopped parsley over the top.
- Serve hot, straight from the oven.
