  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Italian-style)

  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup olive oil (for frying)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. In three shallow dishes, prepare:
    • Dish 1: All-purpose flour.
    • Dish 2: Beaten eggs.
    • Dish 3: Breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper.
  5. Dredge each chicken breast in flour, dip in eggs, and then coat with the breadcrumb mixture.
  6. In a large skillet, heat olive oil over medium-high heat until hot.
  7. Fry the chicken for 4-5 minutes on each side until golden brown and cooked through. Drain on paper towels.
  8. Heat marinara sauce in a small saucepan over low heat.
  9. In a baking dish, place fried chicken breasts in a single layer and spoon marinara sauce over each piece.
  10. Sprinkle shredded mozzarella cheese over the chicken and sauce.
  11. Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly. Broil for 2-3 minutes for a golden top.
  12. Sprinkle freshly chopped parsley over the top.
  13. Serve hot, straight from the oven.
