Description
Oven-roasted mushrooms marinated in soy sauce, balsamic vinegar, and garlic create a savory side dish or versatile ingredient for salads, pasta, and grain bowls. Their rich umami flavor and tender texture make them a delightful addition to any meal.
Ingredients
Scale
- 1 pound of fresh mushrooms (button, cremini, or shiitake)
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 3 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
- 1 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Clean the Mushrooms: Use a damp paper towel to gently wipe off any dirt from the mushrooms. Avoid rinsing them under water to prevent sogginess. For larger mushrooms, remove the stems and gills if desired.
- Slice the Mushrooms: Depending on the size, leave them whole or slice them into thick pieces (about 1/2 inch thick) for even cooking and better marinade absorption.
- Combine Ingredients: In a large mixing bowl, whisk together soy sauce, olive oil, balsamic vinegar, minced garlic, dried thyme, black pepper, and salt until well blended.
- Marinate the Mushrooms: Add the cleaned and sliced mushrooms to the marinade and toss gently until well coated. Let them sit for 15-30 minutes, or refrigerate for a couple of hours or overnight for deeper flavor.
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Baking Sheet: Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Arrange the Mushrooms: Spread the marinated mushrooms in a single layer on the baking sheet, ensuring they are not overcrowded.
- Roast in the Oven: Roast the mushrooms for 20-25 minutes, stirring halfway through. They should be tender and golden-brown when done.
- Check for Doneness: After 20 minutes, check the mushrooms. If they need more time, roast for an additional 5-10 minutes, watching closely to prevent burning.
- Garnish and Serve: Remove from the oven, let cool for a minute, and transfer to a serving dish. Sprinkle with freshly chopped parsley.
- Taste and Adjust: Taste the mushrooms and adjust seasoning with salt or pepper if needed.
- Pairing Ideas: Serve as a side dish, toss into salads, use as a topping for pasta or pizza, or add to grain bowls.
- Storing Leftovers: Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave, but the oven is recommended for best texture.
