- In the same pot, add another tablespoon of olive oil if needed. Sauté 1 chopped onion and 2 minced garlic cloves for about 2-3 minutes until softened. Stir in 2 tablespoons of flour to create a roux, cooking for an additional minute.
- Gradually whisk in 2 cups of beef broth, ensuring there are no lumps. Add 1 teaspoon of dried oregano, 1 teaspoon of dried thyme, and salt and pepper to taste. Bring to a gentle simmer.
- Gently add the browned meatballs back into the pot. Cover and let simmer for about 20 minutes, allowing the flavors to meld together.
- Stir in ½ cup of sour cream or Greek yogurt to the gravy just before serving, mixing thoroughly until creamy and smooth.
