  • Total Time: 75 minutes
  • Yield: 6-8 slices 1x

Description

This savory meatloaf features a delicious blend of ground beef, finely chopped mushrooms, and Swiss cheese, topped with a tangy ketchup glaze. It’s a comforting classic perfect for family dinners and makes for tasty leftovers in sandwiches.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup finely chopped mushrooms (preferably cremini)
  • 1 cup shredded Swiss cheese
  • 1/2 cup breadcrumbs (preferably panko)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup (plus extra for topping)
  • 1 tablespoon Dijon mustard
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, chopped mushrooms, shredded Swiss cheese, breadcrumbs, chopped onion, minced garlic, and egg. Mix until well combined, being careful not to overmix.
  3. Add the Worcestershire sauce, dried thyme, salt, black pepper, ketchup, and Dijon mustard to the mixture. Mix until evenly distributed.
  4. Transfer the mixture to a lightly greased baking dish or lined loaf pan, shaping it into a loaf about 8 inches long and 4 inches wide.
  5. Spread a thin layer of ketchup over the top of the meatloaf.
  6. Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  7. After 45 minutes, check the meatloaf and cover it loosely with aluminum foil if it’s browning too quickly.
  8. Once cooked through, remove from the oven and let it rest for about 10 minutes before slicing.
  9. Slice the meatloaf into thick pieces and serve warm, garnished with fresh parsley. Enjoy with mashed potatoes, steamed vegetables, or a fresh salad.

Notes

  • Customize the recipe by adding bell peppers, carrots, or different types of cheese.
  • For a spicier kick, add red pepper flakes or hot sauce to the mixture.
  • For a gluten-free version, substitute breadcrumbs with gluten-free options.
  • Ensure mushrooms are finely chopped to avoid a soggy texture.
  • A mix of ground beef and ground pork can enhance flavor.
