Ingredients
- Naan bread or pre-baked flatbread crust
- Leftover roasted potatoes or Yukon Gold/red potatoes
- Shredded sharp cheddar cheese
- Monterey Jack cheese
- Mozzarella cheese (optional)
- Cooked ground beef (about half a pound)
- Garlic powder
- Onion powder
- Salt
- Pepper
- Sour cream
- Ranch dressing (optional)
- Olive oil (optional)
- Garlic powder (for sprinkling on flatbread)
- Freshly chopped green onions or chives

Instructions
- Preheat your oven to 400°F (200°C). If you have a pizza stone or a heavy baking sheet, pop it in the oven while it preheats.
- If your potatoes aren't already cooked, boil or roast them until fork-tender. Once slightly cooled, slice them thinly or dice them into small cubes.
- If using ground beef, brown it in a skillet over medium heat, breaking it up as it cooks. Season it with a pinch of salt, pepper, garlic powder, and onion powder. Once fully cooked, drain any excess fat and set aside.
- Shred your cheeses and chop your green onions or chives.
- Take your chosen flatbreads (naan, pita, etc.). Spread a thin layer of sour cream or sour cream-ranch mixture evenly over each flatbread, leaving a small border for the crust. Alternatively, brush with a little olive oil and sprinkle with garlic powder.
- Sprinkle about half of your shredded cheese blend over the creamy base.
- Evenly distribute your sliced or diced pre-cooked potatoes over the cheese layer. Then, sprinkle the seasoned ground beef over the potatoes.
- Now, sprinkle the remaining half of your cheese blend over the potatoes and beef.
- Carefully transfer the assembled flatbreads to the preheated baking sheet or pizza stone. Bake for 10-15 minutes, or until the cheese is bubbly and golden brown, and the crust is nicely crisp.
- Once out of the oven, transfer the flatbreads to a cutting board. Let them cool for just a minute before slicing. Drizzle with a bit more sour cream (if desired) and sprinkle with fresh green onions or chives. Serve hot and enjoy!
