Instructions

For a more intense blueberry flavor throughout the pudding, gently mash about half to two-thirds of the blueberries in a small bowl with a fork. Keep the remaining blueberries whole for layering or garnishing later. If using frozen blueberries, you can thaw them briefly or add them directly.
  2. In a medium-sized bowl or a large jar, pour in your chosen milk. Add the fresh lemon juice, your preferred sweetener, and the vanilla extract if you're using it. Whisk these ingredients together really well until the sweetener is fully dissolved and everything is nicely combined.
  3. Now, sprinkle the chia seeds into the wet mixture. Whisk vigorously for about 30 seconds to a minute to prevent the chia seeds from clumping together. After whisking, stir in the lemon zest.
