- 8 slices of pastrami (preferably nitrate-free)
- 4 oz cream cheese, softened
- 1 tablespoon Dijon mustard
- 1 tablespoon mayonnaise (preferably avocado oil-based)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 4 medium dill pickles, cut into spears or sticks
- Fresh dill or parsley for garnish (optional)
Instructions
- In a medium bowl, combine the softened cream cheese, Dijon mustard, mayonnaise, garlic powder, onion powder, and black pepper. Use a spatula to mix until smooth and well combined, about 2 minutes.
- Lay out the 8 slices of pastrami on a clean cutting board or a large plate, ensuring they are slightly overlapping.
- Evenly spread about 1 to 2 tablespoons of the cream cheese mixture onto each slice of pastrami, leaving a little space at the edges.
- Place one dill pickle spear at one end of each pastrami slice. Start rolling the pastrami tightly around the pickle, working from the end with the pickle towards the opposite end.
- Once rolled, place the seam side down on a serving platter. Repeat the process for all slices of pastrami.
- If desired, slice each roll-up into bite-sized pieces, about 1-2 inches in thickness.
- Finally, garnish with fresh dill or parsley for a pop of color and extra flavor. Serve immediately, or refrigerate for up to one hour.
