  • 68 slices crispy beef bacon
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Colby Jack blend)
  • 1/2 cup keto ranch dressing or 23 tablespoons ranch seasoning with 1/4 cup sour cream and 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • Low-carb tortillas or cheese wraps
  • Avocado oil, olive oil, or coconut oil for frying/baking

Instructions

  1. In a large mixing bowl, combine your cooked and shredded chicken, crumbled crispy beef bacon, softened cream cheese, shredded cheese, keto ranch dressing (or your homemade sour cream/mayo/seasoning mix), garlic powder, onion powder, paprika, salt, and black pepper. Mix everything thoroughly until well combined and creamy.
  2. If using cheese wraps, place slices of provolone or mozzarella on a baking sheet lined with parchment paper. Bake at 350°F (175°C) for 5-7 minutes until bubbly and slightly golden. Let them cool for a minute or two. If using store-bought keto tortillas, warm them in a microwave for 10-15 seconds or in a dry skillet for about 30 seconds per side.
  3. Lay one low-carb tortilla or cheese wrap flat. Take about 2-3 tablespoons of the filling and spread it in a line across one edge, leaving a small border. Tightly roll the wrap from that edge to the other side, forming a compact taquito. Repeat with the remaining wraps and filling.
  4. For shallow frying, heat about 1/2 inch of oil in a large skillet over medium-high heat. Once hot, carefully place the taquitos seam-side down in the oil. Fry for 2-4 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  5. For baking, preheat your oven to 400°F (200°C). Lightly brush the rolled taquitos with oil and place seam-side down on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway through.
  6. For air frying, preheat your air fryer to 375°F (190°C). Lightly spray or brush the taquitos with oil and place in a single layer in the air fryer basket. Air fry for 8-12 minutes, flipping halfway, until golden and crisp.
