- 6–8 slices crispy beef bacon
- 8 oz cream cheese, softened
- 1 cup shredded cheese (cheddar, Monterey Jack, or Colby Jack blend)
- 1/2 cup keto ranch dressing or 2–3 tablespoons ranch seasoning with 1/4 cup sour cream and 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- Low-carb tortillas or cheese wraps
- Avocado oil, olive oil, or coconut oil for frying/baking
Instructions
- In a large mixing bowl, combine your cooked and shredded chicken, crumbled crispy beef bacon, softened cream cheese, shredded cheese, keto ranch dressing (or your homemade sour cream/mayo/seasoning mix), garlic powder, onion powder, paprika, salt, and black pepper. Mix everything thoroughly until well combined and creamy.
- If using cheese wraps, place slices of provolone or mozzarella on a baking sheet lined with parchment paper. Bake at 350°F (175°C) for 5-7 minutes until bubbly and slightly golden. Let them cool for a minute or two. If using store-bought keto tortillas, warm them in a microwave for 10-15 seconds or in a dry skillet for about 30 seconds per side.
- Lay one low-carb tortilla or cheese wrap flat. Take about 2-3 tablespoons of the filling and spread it in a line across one edge, leaving a small border. Tightly roll the wrap from that edge to the other side, forming a compact taquito. Repeat with the remaining wraps and filling.
- For shallow frying, heat about 1/2 inch of oil in a large skillet over medium-high heat. Once hot, carefully place the taquitos seam-side down in the oil. Fry for 2-4 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
- For baking, preheat your oven to 400°F (200°C). Lightly brush the rolled taquitos with oil and place seam-side down on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway through.
- For air frying, preheat your air fryer to 375°F (190°C). Lightly spray or brush the taquitos with oil and place in a single layer in the air fryer basket. Air fry for 8-12 minutes, flipping halfway, until golden and crisp.
