  • 4 boneless, skinless chicken breasts (pounded to 1/4-inch thickness)
  • Salt and Pepper to taste
  • 1/2 teaspoon smoked paprika
  • 4 ounces Cream Cheese (softened)
  • 1 tablespoon Ranch Seasoning mix
  • 4 ounces shredded cheddar cheese (white or yellow)
  • 4 slices Bacon (cooked, diced)
  • 2 to 3 scallions finely sliced

Instructions

  1. Preheat your oven to 400°F (200°C). This step is crucial as it ensures even cooking and helps the chicken develop a nice golden color.
  2. In a small bowl, combine the softened cream cheese, half of the sliced green onions, and the ranch seasoning mix. Mix well until it’s smooth and creamy.
  3. Lightly grease a 9 x 13-inch baking dish with cooking spray.
  4. Take your chicken breasts and pound them to about 1/4-inch thickness using a meat mallet.
  5. Season the pounded chicken breasts with salt, black pepper, and smoked paprika. Place the seasoned chicken in the prepared baking dish.
