This Keto Baked Crack Chicken is a creamy, cheesy dish that combines tender chicken with savory ranch flavors and crispy bacon. Perfect for a comforting meal that fits your keto lifestyle!
Ingredients
Scale
- 4 boneless, skinless chicken breasts (pounded to 1/4-inch thickness)
- Salt and Pepper to taste
- 1/2 teaspoon smoked paprika
- 4 ounces Cream Cheese (softened)
- 1 tablespoon Ranch Seasoning mix
- 4 ounces shredded cheddar cheese (white or yellow)
- 4 slices Bacon (cooked, diced)
- 2 to 3 scallions finely sliced
Instructions
- Preheat your oven to 400°F (200°C). This step is crucial as it ensures even cooking and helps the chicken develop a nice golden color.
- In a small bowl, combine the softened cream cheese, half of the sliced green onions, and the ranch seasoning mix. Mix well until it’s smooth and creamy.
- Lightly grease a 9 x 13-inch baking dish with cooking spray.
- Take your chicken breasts and pound them to about 1/4-inch thickness using a meat mallet.
- Season the pounded chicken breasts with salt, black pepper, and smoked paprika. Place the seasoned chicken in the prepared baking dish.
- Top each chicken breast with approximately 2 tablespoons of the cream cheese mixture. Spread it evenly over the surface.
- Place the baking dish in the preheated oven and bake uncovered for 12 minutes.
- After 12 minutes, remove the dish from the oven and evenly divide the shredded cheese over the top of the chicken.
- Sprinkle the diced bacon over the chicken breasts.
- Return the chicken to the oven and bake for an additional 10 to 15 minutes, or until the internal temperature reaches 165°F (74°C).
- Once done, remove the baking dish from the oven and garnish with the remaining green onions before serving.

Keywords: To avoid dry chicken, ensure you don’t overcook it. Use a meat thermometer to check for doneness at 165°F (74°C). Consider prepping the cream cheese mixture a day ahead to save time during busy weeknights.
