  • 1 lb sirloin, ribeye, or flank steak, cut into 1-inch to 1.5-inch pieces
  • 1 lb small to medium-sized Yukon Gold or red potatoes, cut into uniform 1-inch cubes
  • 46 cloves fresh garlic, minced
  • 4 tablespoons unsalted butter
  • 35 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano or thyme (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and scrub your potatoes thoroughly; there's no need to peel them. Cut the potatoes into uniform 1-inch cubes.
  2. In a large bowl, toss the cubed potatoes with 2-3 tablespoons of olive oil, 1 teaspoon of salt, ½ teaspoon of black pepper, ½ teaspoon of onion powder, and ½ teaspoon of paprika. Spread them out in a single layer on a large baking sheet and roast in the preheated oven for 25-35 minutes, or until fork-tender and lightly browned and crispy. Flip them halfway through for even cooking.
  3. While the potatoes are roasting, prepare your steak. Pat the steak bites completely dry with paper towels. In a clean large bowl, toss the steak bites with 1 tablespoon of olive oil, 1 teaspoon of salt, ½ teaspoon of black pepper, and any other dried herbs you like.
  4. Once the potatoes are nearly done (about 10 minutes left), heat a large, heavy-bottomed skillet over medium-high to high heat. Add 1 tablespoon of olive oil to the hot pan. Once the oil is shimmering, add about half of the steak bites to the skillet in a single layer. Sear for 1-2 minutes per side until a beautiful brown crust forms and the steak reaches your desired doneness. Transfer the cooked steak bites to a plate and loosely tent with foil. Repeat with the remaining steak bites, adding a little more oil if needed.
  5. Reduce the heat to medium-low. Add 4 tablespoons of unsalted butter to the same skillet. Once the butter is melted and slightly foamy, add your minced garlic. Sauté for about 30-60 seconds, stirring constantly, until fragrant.
  6. Remove the roasted potatoes from the oven. Add both the cooked steak bites and the roasted potatoes directly into the skillet with the garlic butter. Toss everything gently to ensure the steak and potatoes are beautifully coated in that delicious garlicky butter.
  7. Transfer the Garlic Steak Bites and Potatoes to a serving platter. Garnish generously with fresh chopped parsley. Serve immediately.
