- New York strip, sirloin, or ribeye steaks (1 to 1.5 inches thick)
- Cremini mushrooms
- Heavy cream
- Fresh garlic

Instructions
- Pat your steaks thoroughly dry with paper towels. Season both sides generously with salt and freshly ground black pepper. Let them sit at room temperature for about 20-30 minutes while you prep the other ingredients.
- Heat a large, heavy-bottomed skillet over medium-high heat until it's smoking hot. Add about 1-2 tablespoons of olive oil. Once the oil shimmers, carefully place the steaks in the hot pan. Sear for 3-5 minutes per side for a medium-rare steak, then remove the steaks from the skillet and let them rest.
- Reduce the heat to medium. Add a tablespoon of butter to the same skillet. Add your sliced shallots (or onion) and cook for 2-3 minutes until softened. Next, add the sliced mushrooms and cook for 5-7 minutes until browned and tender. Add the minced garlic and cook for another minute.
- Pour in about 1/2 cup of beef broth into the skillet. Bring it to a simmer, scraping up any browned bits from the bottom of the pan. Let the broth reduce by about half, then stir in the heavy cream and dried thyme. Let it cook for 3-5 minutes until slightly thickened.
- Return the rested steaks to the skillet with the mushroom sauce. Spoon the sauce generously over the steaks and let them warm through for about 1-2 minutes. Garnish with fresh chopped parsley before serving.
