  • 3 cups All-Purpose Flour (plus more for dusting)
  • 2 1/4 teaspoons Active Dry Yeast
  • 2 tablespoons Granulated Sugar
  • 1 cup Warm Milk (105-115°F/40-46°C, Whole Milk recommended)
  • 1/4 cup Unsalted Butter (melted, plus more for greasing)
  • 1 Large Egg
  • 1 teaspoon Fine Sea Salt (for Dough)
  • 1/4 cup Unsalted Butter (for Honey Garlic Butter Topping)
  • 3 cloves Fresh Garlic (minced)
  • 1/4 cup Honey
  • Flaky Sea Salt (for finishing)

Instructions

  1. In a large mixing bowl (or the bowl of a stand mixer), combine the warm milk (105-115°F/40-46°C), a pinch of granulated sugar, and the active dry yeast. Stir gently and let it sit for 5-10 minutes until it becomes foamy.
  2. To the foamy yeast mixture, add the remaining granulated sugar, melted unsalted butter, and the large egg. Whisk until well combined.
  3. Gradually add the all-purpose flour (starting with about 3 cups) and fine sea salt to the wet mixture. Mix until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes (or 6-8 minutes with a stand mixer) until it's smooth, elastic, and passes the windowpane test. Add minimal extra flour only if the dough is too sticky.
  5. Lightly oil a clean large bowl. Place the dough in the bowl, turning to coat. Cover tightly with plastic wrap or a clean kitchen towel and let it rise in a warm, draft-free place for 1 to 1.5 hours, or until doubled in size.
  6. Gently punch down the risen dough to release air. Turn it onto a lightly floured surface. Divide the dough into 12 equal pieces and shape each into a smooth, round ball.
  7. Arrange the shaped rolls in a greased 9×13 inch baking dish, leaving a little space. Cover loosely and let them rise again for 30-45 minutes until puffy and nearly doubled. Preheat your oven to 375°F (190°C) towards the end of this rise.
  8. Bake for 18-22 minutes, or until the rolls are beautifully golden brown and cooked through. If they start browning too quickly, you can loosely tent them with foil.
  9. While the rolls are baking, or immediately after they come out of the oven, melt the unsalted butter in a small saucepan over medium-low heat. Add the minced fresh garlic and cook gently for 1-2 minutes until fragrant, being careful not to brown the garlic. Remove from heat and stir in the honey.
  10. As soon as the hot rolls come out of the oven, generously brush them all over with the warm honey garlic butter. Immediately sprinkle them generously with flaky sea salt.
  11. Let the rolls cool for just a few minutes in the baking dish before serving. They are truly best enjoyed warm!
