  • 2 cups of jasmine rice
  • 4 cups of water or chicken broth
  • 1 pound of boneless, skinless chicken thighs
  • 1 cup of honey
  • 1/2 cup of BBQ sauce
  • 2 tablespoons of soy sauce
  • 1 tablespoon of apple cider vinegar
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1/4 cup of chopped green onions
  • Sesame seeds (optional)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, combine the rinsed rice and 4 cups of water or chicken broth.
  3. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15-20 minutes.
  4. Turn off the heat and let the rice sit, covered, for another 5-10 minutes.
  5. Fluff the rice with a fork and set aside.
  6. In a medium bowl, mix honey, BBQ sauce, soy sauce, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper.
  7. Whisk until smooth and well combined. Adjust seasoning to taste.
  8. Set the sauce aside for marinating the chicken.
  9. Place chicken thighs in a large resealable plastic bag or shallow dish.
  10. Pour half of the honey BBQ sauce over the chicken, ensuring each piece is coated.
  11. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or longer for more flavor).
  12. Preheat your grill or a large skillet over medium-high heat. If using a skillet, add olive oil.
  13. Add the marinated chicken thighs and cook for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  14. Brush the remaining honey BBQ sauce over the chicken during the last few minutes of cooking.
  15. Remove from heat and let the chicken rest for 5 minutes.
  16. Prepare serving plates with a bed of jasmine rice.
  17. Slice the grilled chicken thighs or serve whole.
  18. Place the chicken on the rice and drizzle with any remaining honey BBQ sauce.
  19. Garnish with chopped green onions and sesame seeds.
  20. Serve immediately and enjoy!
