- 2 cups of jasmine rice
- 4 cups of water or chicken broth
- 1 pound of boneless, skinless chicken thighs
- 1 cup of honey
- 1/2 cup of BBQ sauce
- 2 tablespoons of soy sauce
- 1 tablespoon of apple cider vinegar
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of smoked paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 1/4 cup of chopped green onions
- Sesame seeds (optional)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium pot, combine the rinsed rice and 4 cups of water or chicken broth.
- Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15-20 minutes.
- Turn off the heat and let the rice sit, covered, for another 5-10 minutes.
- Fluff the rice with a fork and set aside.
- In a medium bowl, mix honey, BBQ sauce, soy sauce, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Whisk until smooth and well combined. Adjust seasoning to taste.
- Set the sauce aside for marinating the chicken.
- Place chicken thighs in a large resealable plastic bag or shallow dish.
- Pour half of the honey BBQ sauce over the chicken, ensuring each piece is coated.
- Seal the bag or cover the dish and refrigerate for at least 30 minutes (or longer for more flavor).
- Preheat your grill or a large skillet over medium-high heat. If using a skillet, add olive oil.
- Add the marinated chicken thighs and cook for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Brush the remaining honey BBQ sauce over the chicken during the last few minutes of cooking.
- Remove from heat and let the chicken rest for 5 minutes.
- Prepare serving plates with a bed of jasmine rice.
- Slice the grilled chicken thighs or serve whole.
- Place the chicken on the rice and drizzle with any remaining honey BBQ sauce.
- Garnish with chopped green onions and sesame seeds.
- Serve immediately and enjoy!
