Ingredients

  • Gochujang (Korean Chili Paste)
  • Gochugaru (Korean Chili Flakes)
  • Chicken or Vegetable Broth
  • Mushrooms (Shiitake or Enoki)
  • Egg
  • Green Onions
  • Sesame Seeds
  • Cream Cheese or Mayonnaise
  • Milk
  • Minced Garlic
  • Pinch of Sugar
  • Salt
  • White Pepper

Instructions

  1. Thinly slice the beef against the grain into 1/4-inch pieces.
  2. In a bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, brown sugar, pear juice, and black pepper. Whisk.
  3. Add the sliced beef to the marinade, ensuring it's fully coated. Refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. In a small bowl, combine softened cream cheese (or mayonnaise), milk, minced garlic, a pinch of sugar, salt, and white pepper.
  5. Whisk until smooth and creamy. Add a touch more milk if it's too thick for drizzling. Cover and refrigerate until serving.
  6. Preheat a grill or grill pan to medium-high heat and lightly oil.
  7. Remove beef from marinade, letting excess drip off. Grill slices for 1-2 minutes per side until charred and cooked through. Avoid overcooking, as thin slices cook rapidly.
  8. Transfer grilled beef to a cutting board, tent with foil, and let rest for 5 minutes.
  9. Bring 2-3 cups of water (or broth) to a boil in a pot.
  10. Add ramen noodles and seasoning packets (if using instant ramen). If using fresh noodles, add them to the boiling broth.
  11. Stir in gochujang and gochugaru, adjusting to your preferred spice level. Add mushrooms and cook for 2-3 minutes until noodles are al dente and mushrooms are tender.
  12. If adding an egg, gently poach it directly in the simmering broth or prepare separately (soft-boiled/fried).
  13. Transfer the cooked ramen noodles and spicy broth to a large serving bowl.
  14. Arrange the grilled beef slices artfully on top of the ramen.
  15. Generously drizzle the prepared creamy sauce over the beef and ramen.
  16. Garnish with sliced green onions and a sprinkle of sesame seeds. Add a halved soft-boiled egg, if desired.
