Instructions
- Thinly slice the beef against the grain into 1/4-inch pieces.
- In a bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, brown sugar, pear juice, and black pepper. Whisk.
- Add the sliced beef to the marinade, ensuring it's fully coated. Refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- In a small bowl, combine softened cream cheese (or mayonnaise), milk, minced garlic, a pinch of sugar, salt, and white pepper.
- Whisk until smooth and creamy. Add a touch more milk if it's too thick for drizzling. Cover and refrigerate until serving.
- Preheat a grill or grill pan to medium-high heat and lightly oil.
- Remove beef from marinade, letting excess drip off. Grill slices for 1-2 minutes per side until charred and cooked through. Avoid overcooking, as thin slices cook rapidly.

- Bring 2-3 cups of water (or broth) to a boil in a pot.

- If adding an egg, gently poach it directly in the simmering broth or prepare separately (soft-boiled/fried).
- Transfer the cooked ramen noodles and spicy broth to a large serving bowl.
- Arrange the grilled beef slices artfully on top of the ramen.
- Generously drizzle the prepared creamy sauce over the beef and ramen.
- Garnish with sliced green onions and a sprinkle of sesame seeds. Add a halved soft-boiled egg, if desired.
