  • 2 large chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1 tablespoon fresh parsley, chopped (optional)
  • 4 large flour tortillas
  • 1 cup fresh spinach leaves
  • 1/2 cup diced tomatoes
  • 1/4 cup ranch dressing (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the chicken breasts into thin strips on a cutting board.
  3. In a large mixing bowl, combine the sliced chicken with olive oil, minced garlic, paprika, salt, and pepper. Mix well to coat the chicken evenly.
  4. Transfer the chicken to a baking dish, spreading it out in a single layer.
  5. Bake for 20-25 minutes, or until the chicken is cooked through (165°F/75°C).
  6. In a medium bowl, combine shredded mozzarella, shredded cheddar, and softened cream cheese.
  7. Mix until well combined. Optionally, add chopped parsley for extra flavor.
  8. Once the chicken is done, let it cool for a few minutes.
  9. Lay a flour tortilla flat on a clean surface. Place a handful of fresh spinach in the center.
  10. Add a portion of the baked chicken strips on top of the spinach.
  11. Spoon a few tablespoons of the cheese mixture over the chicken.
  12. Sprinkle diced tomatoes on top, if using, and drizzle with ranch dressing, if desired.
  13. Fold the sides of the tortilla inwards, then roll it up from the bottom to the top, tucking in the sides as you go.
  14. Repeat the assembly for the remaining tortillas and filling.
  15. Heat a little olive oil in a large skillet over medium heat.
  16. Place the wrapped tortillas seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
  17. Remove the wraps from the skillet and let them cool for a minute before slicing in half.
  18. Serve warm with extra ranch dressing or your favorite dipping sauce. Garnish with fresh parsley if desired.
