Instructions

  1. Cook your long-grain white rice according to package directions. Once cooked, fluff it with a fork and stir in a tablespoon of lime juice and a handful of chopped fresh cilantro. Season with a pinch of salt to taste. Set aside, keeping it warm.
  2. In a large skillet or Dutch oven, brown the ground beef over medium-high heat, breaking it up with a spoon as it cooks. Once fully browned, drain off any excess fat.
  3. Reduce the heat to medium. Add a chopped yellow onion to the skillet with the beef and cook until softened, about 5-7 minutes.
  4. Stir in minced garlic, chili powder, ground cumin, dried oregano, and a pinch of paprika. Cook for another minute until the spices are fragrant.
  5. Stir in about 1-2 tablespoons of tomato paste (if using) and cook for another minute.
  6. Pour in about ½ cup of beef broth. Bring the mixture to a gentle simmer and let it cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly. Taste and adjust seasonings.
  7. While the beef is simmering, prepare the beans. If using canned beans, drain and rinse them thoroughly.
  8. In a small saucepan, warm the beans over low heat with a splash of water or broth, a pinch of cumin, and a little salt until heated through.
  9. Warm the tortillas individually in a dry skillet over medium heat for about 15-20 seconds per side until soft and flexible.
  10. Lay a warm tortilla flat on a clean surface. Spread a generous line of seasoned rice down the center, leaving space at the top and bottom.
  11. Layer with warm, seasoned beans, followed by a good amount of the savory beef filling.
  12. Sprinkle a generous handful of shredded cheese over the beef.
  13. To roll, fold in the sides of the tortilla over the filling, then tightly roll the tortilla upwards, tucking the filling in as you go.
  14. Repeat with the remaining tortillas and fillings. Serve immediately.
