Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat the softened unsalted butter and granulated sugar together on medium-high speed until light, fluffy, and pale in color, about 2-3 minutes.
  3. Beat in the almond extract and scrape down the sides of the bowl to ensure everything is well combined.
  4. In a separate medium bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the wet ingredients with the mixer on low speed, mixing until just combined.
  5. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
