  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1/2 cup Unsalted Cold Butter, cut into small pieces
  • 1/4 teaspoon Salt
  • 2 Large Eggs, at room temperature
  • 1/2 cup Fresh Lemon Juice
  • 2 tablespoons Lemon Zest
  • 2 tablespoons A Touch More Flour (for the filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, and salt for the crumble. Add the very cold, diced butter and cut it into the dry ingredients until the mixture resembles coarse crumbs.
  3. Press about two-thirds of the crumb mixture evenly into the bottom of your prepared pan to form a compact crust. Reserve the remaining one-third of the crumb mixture for topping later. Par-bake the crust for 12-15 minutes until lightly golden.
  4. In a medium bowl, whisk together the eggs, granulated sugar, fresh lemon juice, lemon zest, and the couple of tablespoons of flour until smooth.
  5. Once the crust is par-baked, pour the lemon filling evenly over the warm crust. Sprinkle the reserved crumb mixture evenly over the top of the lemon filling.
  6. Return the pan to the oven and bake for another 25-30 minutes until the lemon filling is set and the crumb topping is golden brown.
  7. Allow the bars to cool completely in the pan on a wire rack at room temperature. Once cool, transfer to the refrigerator and chill for at least 2-3 hours.
  8. Use the parchment paper overhang to lift the bars out of the pan, place on a cutting board, and slice into squares or rectangles. Dust with powdered sugar before serving if desired.
