Ingredients
- boneless, skinless chicken thighs

Instructions
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Peel and chop the sweet potatoes into roughly 1-inch cubes and slice the red onion into thick wedges.
- Pat the chicken thighs dry with paper towels and season them generously with salt and pepper.
- In a small bowl, whisk together the honey, minced garlic, a tablespoon of olive oil, and a pinch of salt and pepper. Optionally, add a small sprig of fresh rosemary or a teaspoon of dried thyme.
- In a large mixing bowl, combine the chopped sweet potatoes and red onion. Drizzle with 1-2 tablespoons of olive oil and toss to coat. Spread them out on the prepared baking sheet in a single layer.
- Arrange the seasoned chicken pieces among the vegetables on the baking sheet and sprinkle the dried cranberries evenly over everything.

- During the last 5 minutes of baking, remove the tray from the oven and crumble the feta cheese over the entire dish. Return to the oven for 5 more minutes until the feta is slightly warmed and softened.
