- 1 diced onion
- 1 diced bell pepper
- 4 cups frozen tater tots
- 1–2 cups shredded cheese (a mix of provolone and mozzarella)
- Salt to taste

Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, brown 1 pound of ground beef until fully cooked. Drain any excess fat.
- To the beef, add 1 diced onion and 1 diced bell pepper. Cook for about 5-7 minutes until the vegetables are tender and fragrant.
- Sprinkle in salt, pepper, and garlic powder to taste. Stir everything together and let it cook for another minute.
- In a greased 9×13 inch baking dish, spread the beef and veggie mixture evenly across the bottom. Then, layer about 4 cups of frozen tater tots on top.
- Sprinkle 1-2 cups of shredded cheese (a mix of provolone and mozzarella works great) over the tater tots.
- Place the casserole in the preheated oven and bake for 25-30 minutes, or until the tater tots are golden brown and the cheese is bubbly and melted.
- Once it’s out of the oven, let the casserole cool for a few minutes before serving.
