Description
These Philadelphia Cheesecake Bars are a creamy, dreamy twist on traditional cheesecake, perfectly portioned for sharing. With a rich, velvety filling on a buttery graham cracker crust, they are an irresistible dessert option for any occasion.
Ingredients
Scale
- 2 packages (8 oz each) Philadelphia Cream Cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 2 large eggs (or flax eggs)
- 1 teaspoon vanilla extract
- 1 ¾ cups crushed graham crackers
- ½ cup granulated sugar
- ½ cup melted butter
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine 1 ¾ cups of crushed graham crackers, ½ cup of granulated sugar, and ½ cup of melted butter. Mix until well combined and press firmly into the bottom of a greased 9×13 inch baking dish to form an even layer. Bake for about 10 minutes, then remove from the oven and allow it to cool slightly.
- In a large bowl, beat 2 packages (8 oz each) of softened Philadelphia Cream Cheese until smooth. Gradually add in 1 cup of granulated sugar, mixing well. Next, add 1 cup of sour cream, 2 large eggs (or flax eggs), and 1 teaspoon of vanilla extract. Beat until creamy and smooth, ensuring there are no lumps.
- Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake in the preheated oven for about 30-35 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake bars inside for an additional hour to cool gradually.
- Once cooled, transfer the baking dish to the refrigerator and chill for at least 4 hours, or overnight for best results. When ready to serve, lift the bars out of the pan using the edges of the parchment paper (if used) and cut into squares.

Keywords: Consider adding chocolate chips, fruit puree, or nuts to the cheesecake filling for added flavor and texture. These bars are delightful on their own, but you can also serve them with a drizzle of chocolate sauce, fruit compote, or whipped cream for an extra treat. Be patient! Letting the bars chill in the refrigerator ensures they firm up nicely and makes them easier to cut.
