- In a large bowl, combine the cooled mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped chives, garlic powder, black pepper, and salt. Use a spatula to mix until evenly blended, about 1-2 minutes.
- Crack the egg into the mixture. Stir until completely incorporated, which should take about another minute.
- Use a tablespoon to scoop out the mixture and roll it into balls, about the size of a golf ball. If the mixture feels too soft, chill it in the fridge for 15–20 minutes.
- Roll each potato ball in flour until evenly dusted, then dip in beaten egg and coat with breadcrumbs. For an extra crispy texture, double dip: flour → beaten egg → breadcrumbs.
- In a deep pan, heat about 2 inches of oil over medium heat, aiming for around 350°F (175°C).
- Carefully place the potato bites in the hot oil in batches, frying for about 2-3 minutes on each side or until golden brown.
- Once golden and crispy, transfer the fried bites to a paper towel-lined plate to absorb excess oil. Let them sit for a minute before serving.
