Instructions

  1. In a large bowl, combine the cooled mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped chives, garlic powder, black pepper, and salt. Use a spatula to mix until evenly blended, about 1-2 minutes.
  2. Crack the egg into the mixture. Stir until completely incorporated, which should take about another minute.
  3. Use a tablespoon to scoop out the mixture and roll it into balls, about the size of a golf ball. If the mixture feels too soft, chill it in the fridge for 15–20 minutes.
  4. Roll each potato ball in flour until evenly dusted, then dip in beaten egg and coat with breadcrumbs. For an extra crispy texture, double dip: flour → beaten egg → breadcrumbs.
  5. In a deep pan, heat about 2 inches of oil over medium heat, aiming for around 350°F (175°C).

  7. Once golden and crispy, transfer the fried bites to a paper towel-lined plate to absorb excess oil. Let them sit for a minute before serving.
