Description

Flavorful Jailhouse Rice is a comforting one-pot meal that combines seasoned beef, aromatic vegetables, and fluffy rice. This hearty dish is perfect for cozy weeknight dinners or feeding a hungry crowd.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup long-grain white rice (jasmine or basmati)
  • 1 finely diced yellow onion
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes, undrained
  • 1 can kidney beans, rinsed and drained
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 pinch cayenne pepper
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Brown the Beef: Heat a tablespoon of olive oil in a large pot over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook until browned with no pink remaining. Drain excess fat and set aside.
  2. Sauté the Aromatics: Reduce heat to medium and add diced onion and green bell pepper to the pot. Sauté for 5-7 minutes until softened, then add minced garlic and cook for another minute.
  3. Build the Flavor Base: Return the browned beef to the pot and add chili powder, cumin, oregano, smoked paprika, cayenne pepper, salt, and black pepper. Stir well and let spices toast for about 1 minute.
  4. Add Liquids and Rice: Pour in the undrained diced tomatoes and beef broth, stirring to combine. Add the rinsed rice and kidney beans, stirring gently to distribute.
  5. Simmer to Perfection: Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 18-20 minutes without lifting the lid.
  6. Rest and Fluff: After cooking, remove from heat and let rest for 5-10 minutes with the lid on. Fluff the rice with a fork before serving.
