  • 1 cup long-grain rice (basmati or jasmine preferred)
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 2 cups chicken or vegetable broth
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Fresh dill or parsley for garnish

Instructions

  1. Rinse 1 cup of long-grain rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add 2 cloves of minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the rinsed rice and sauté for another 2-3 minutes to toast the rice slightly.
  4. Pour in 2 cups of chicken or vegetable broth, along with the zest and juice of 1 lemon. Bring to a boil.
  5. Once boiling, reduce heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is tender and has absorbed all the liquid.
  6. Remove the pot from heat and let it sit covered for an additional 5 minutes. Use a fork to fluff the rice gently.
  7. Stir in chopped fresh dill or parsley before serving.
