- In a mixing bowl, whisk together 1 cup of all-purpose flour, 2 large eggs, 2 cups of milk, and a pinch of salt until smooth. Let the batter rest for about 30 minutes to an hour.
- Heat a non-stick skillet over medium heat. Lightly grease it with butter or cooking spray. Pour about 1/4 cup of batter into the pan, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat until all batter is used, stacking the crepes on a plate as you go.
- In a mixing bowl, combine 1 cup of mascarpone cheese, 1 cup of heavy cream (or Greek yogurt), and 1/4 cup of powdered sugar. Whip until soft peaks form. Add a teaspoon of vanilla extract or lemon zest for extra flavor.
- On a serving plate, place one crepe down. Spread a thin layer of the filling over it, followed by a layer of your choice of chopped fruits. Repeat this process, stacking crepes, filling, and fruit until you've used all the crepes.
- Cover the cake with plastic wrap and refrigerate for at least 2 hours.
- When ready to serve, slice the crepe cake with a sharp knife for clean cuts.
