Description

This Fruit Crepe Cake is a stunning dessert that combines delicate crepes with fresh fruit and creamy filling. It’s a perfect treat for any occasion, sure to impress your friends and family!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups milk
  • a pinch of salt
  • 1 cup mascarpone cheese
  • 1 cup heavy cream or Greek yogurt
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract or lemon zest
  • fresh fruits like strawberries, blueberries, bananas, and kiwi
  • granulated sugar or powdered sugar
  • maple syrup or agave syrup

Instructions

  1. In a mixing bowl, whisk together 1 cup of all-purpose flour, 2 large eggs, 2 cups of milk, and a pinch of salt until smooth. Let the batter rest for about 30 minutes to an hour.
  2. Heat a non-stick skillet over medium heat. Lightly grease it with butter or cooking spray. Pour about 1/4 cup of batter into the pan, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat until all batter is used, stacking the crepes on a plate as you go.
  3. In a mixing bowl, combine 1 cup of mascarpone cheese, 1 cup of heavy cream (or Greek yogurt), and 1/4 cup of powdered sugar. Whip until soft peaks form. Add a teaspoon of vanilla extract or lemon zest for extra flavor.
  4. On a serving plate, place one crepe down. Spread a thin layer of the filling over it, followed by a layer of your choice of chopped fruits. Repeat this process, stacking crepes, filling, and fruit until you've used all the crepes.
  5. Cover the cake with plastic wrap and refrigerate for at least 2 hours.
  6. When ready to serve, slice the crepe cake with a sharp knife for clean cuts.

Keywords: If your batter seems too thick, add a little more milk to thin it out. For a stunning finish, consider drizzling some chocolate syrup or a fruit compote over the top just before serving.
