Description
Banana Cream Pancake Poppers are fluffy, mouthwatering treats filled with ripe bananas and whipped cream. Perfect for brunch gatherings or a cozy morning at home, these delightful bites are sure to impress!
Ingredients
- Ripe, mashed bananas
- Pancake mix
- Milk
- Eggs
- Vanilla extract
- Whipped topping
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin to prevent sticking.
- In a large bowl, combine your pancake mix with any spices you’d like to add, such as cinnamon or nutmeg for extra flavor.
- In another bowl, mash your ripe bananas until smooth. Add in the milk, eggs, and vanilla extract, whisking until fully combined.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!
- Using a spoon or a small ice cream scoop, fill each muffin cup about 2/3 full with the batter.
- Place the muffin tin in your preheated oven and bake for about 10-12 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the poppers from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack.
- Once cooled, you can either serve them as is or top them with whipped topping and sliced bananas for an extra indulgent treat.
