  • Author: shareylady
  • Total Time: 30 minutes
  • Yield: 24 cheesecake balls 1x

Description

Baileys Extract Cheesecake Balls are delightful treats that combine rich, creamy cheesecake with the indulgent flavor of Baileys Extract. Perfect for gatherings or a cozy night in, these bites of heaven are easy to make and sure to impress.

Ingredients

Scale
  • 8 oz of softened cream cheese
  • 1/4 cup of Baileys Extract
  • 1 cup of powdered sugar
  • 1/2 cup of graham cracker crumbs
  • Chocolate coating (dark chocolate, milk chocolate, or white chocolate)

Instructions

  1. In a mixing bowl, combine 8 oz of softened cream cheese with 1/4 cup of Baileys Extract. Mix until smooth and creamy.
  2. Gradually mix in 1 cup of powdered sugar. Beat until fully incorporated and the mixture is fluffy.
  3. Stir in 1/2 cup of graham cracker crumbs until well combined. The mixture should hold together well.
  4. Cover the bowl with plastic wrap and refrigerate for about 30 minutes. This will make it easier to form the balls.
  5. Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. Place them on a parchment-lined baking sheet.
  6. Place the baking sheet in the freezer for about 15-20 minutes to firm them up.
  7. While the balls are chilling, melt your chocolate in a microwave-safe bowl or using a double boiler until smooth.
  8. Remove the cheesecake balls from the freezer. Dip each ball into the melted chocolate, ensuring they are fully coated. Use a fork to lift them out, allowing excess chocolate to drip off.
  9. Return the coated cheesecake balls to the parchment-lined baking sheet. If desired, sprinkle some additional graham cracker crumbs on top for decoration before the chocolate sets.
  10. Place the baking sheet back in the refrigerator for about 30 minutes, or until the chocolate has hardened completely.
