- In a mixing bowl, combine 8 oz of softened cream cheese with 1/4 cup of Baileys Extract. Mix until smooth and creamy.
- Gradually mix in 1 cup of powdered sugar. Beat until fully incorporated and the mixture is fluffy.
- Stir in 1/2 cup of graham cracker crumbs until well combined. The mixture should hold together well.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes. This will make it easier to form the balls.
- Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. Place them on a parchment-lined baking sheet.
- Place the baking sheet in the freezer for about 15-20 minutes to firm them up.
- While the balls are chilling, melt your chocolate in a microwave-safe bowl or using a double boiler until smooth.
- Remove the cheesecake balls from the freezer. Dip each ball into the melted chocolate, ensuring they are fully coated. Use a fork to lift them out, allowing excess chocolate to drip off.
- Return the coated cheesecake balls to the parchment-lined baking sheet. If desired, sprinkle some additional graham cracker crumbs on top for decoration before the chocolate sets.
- Place the baking sheet back in the refrigerator for about 30 minutes, or until the chocolate has hardened completely.
