Ingredients

  • 2 ripe but firm avocados
  • 4 large fresh eggs
  • 8 strips of premium beef bacon
  • Salt
  • Freshly ground black pepper
  • Olive oil or butter
  • Optional: red pepper flakes, chopped fresh chives, hot sauce

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lay the beef bacon strips in a single layer on a baking sheet. You can line it with parchment paper for easy cleanup.
  3. Pop the bacon into the preheated oven. It typically takes about 12-18 minutes, depending on thickness and your desired crispiness. Keep an eye on it.
  4. While the bacon cooks, cut each avocado in half lengthwise around the pit and twist the halves to separate them.
  5. Gently remove the pit and scoop out a small amount of avocado flesh from the center of each half to create a slightly larger well for your egg.
  6. Lightly brush the inside of the avocado halves with olive oil or a squeeze of lemon juice.
  7. Place the avocado halves (cut-side up) onto the same baking sheet you used for the bacon.
  8. Gently crack one egg into the well of each avocado half and season each egg generously with salt and freshly ground black pepper.
  9. Place the baking sheet with the avocado-egg halves into the preheated oven and bake for about 15-20 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  10. Once baked, carefully remove the avocado-egg halves from the oven and crumble the crispy beef bacon over the top of each avocado half.
  11. Sprinkle with fresh chopped chives or a pinch of red pepper flakes if desired, serve immediately, and enjoy!
