Crispy Garlic Parmesan Potatoes are a delicious side dish featuring tender baby potatoes coated in a savory blend of garlic, spices, and melted Parmesan cheese. - 2 pounds of baby potatoes (or any small potatoes)
- 4 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of smoked paprika
- 1 teaspoon of dried oregano
- 1 teaspoon of salt (adjust to taste)
- ½ teaspoon of black pepper
- ½ cup of grated Parmesan cheese
- 2 tablespoons of fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the baby potatoes under cold water and pat them dry. Cut larger potatoes in half or quarters.
- In a large pot, cover the potatoes with cold water, add a pinch of salt, and bring to a boil. Reduce heat and simmer for 10-15 minutes until fork-tender.
- Drain the potatoes and let them cool for about 5 minutes.
- In a large bowl, combine olive oil, minced garlic, garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper. Stir well.
- Add the cooled potatoes to the bowl and gently toss until evenly coated.
- Line a baking sheet with parchment paper or grease it lightly.
- Transfer the seasoned potatoes to the baking sheet in a single layer.
- Roast for 25-30 minutes, tossing halfway through for even browning.
- Remove from the oven and sprinkle grated Parmesan over the hot potatoes.
- Bake for an additional 5 minutes to melt the cheese.
- Let cool for a couple of minutes, then sprinkle with chopped parsley.
- Transfer to a serving dish and enjoy hot!

- Choose the Right Potatoes: Baby potatoes are ideal, but Yukon Gold or red potatoes can also be used.
