  • 2 pounds of baby potatoes (or any small potatoes)
  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of dried oregano
  • 1 teaspoon of salt (adjust to taste)
  • ½ teaspoon of black pepper
  • ½ cup of grated Parmesan cheese
  • 2 tablespoons of fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the baby potatoes under cold water and pat them dry. Cut larger potatoes in half or quarters.
  3. In a large pot, cover the potatoes with cold water, add a pinch of salt, and bring to a boil. Reduce heat and simmer for 10-15 minutes until fork-tender.
  4. Drain the potatoes and let them cool for about 5 minutes.
  5. In a large bowl, combine olive oil, minced garlic, garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper. Stir well.
  6. Add the cooled potatoes to the bowl and gently toss until evenly coated.
  7. Line a baking sheet with parchment paper or grease it lightly.
  8. Transfer the seasoned potatoes to the baking sheet in a single layer.
  9. Roast for 25-30 minutes, tossing halfway through for even browning.
  10. Remove from the oven and sprinkle grated Parmesan over the hot potatoes.
  11. Bake for an additional 5 minutes to melt the cheese.
  12. Let cool for a couple of minutes, then sprinkle with chopped parsley.
  13. Transfer to a serving dish and enjoy hot!
