- 1 cup of panko breadcrumbs
- 1/2 cup of all-purpose flour
- 2 large eggs
- 1 teaspoon of garlic powder

- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of cayenne pepper (optional, for heat)
- 1/2 cup of mayonnaise
- 2 tablespoons of sweet chili sauce
- 1 tablespoon of sriracha (adjust to taste)
- 1 tablespoon of lime juice
- Fresh cilantro, chopped (for garnish)
- Vegetable oil (for frying)
Instructions
- Cut the salmon fillet into bite-sized pieces, about 1-inch cubes. Pat the salmon pieces dry with paper towels.
- In a shallow bowl, combine the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Mix well.
- In a second bowl, whisk the two large eggs until well combined.
- In a third bowl, add the panko breadcrumbs.
- Coat each salmon piece in the seasoned flour mixture, shaking off excess. Dip into the beaten eggs, then roll in the panko breadcrumbs, pressing gently to adhere. Repeat for all pieces.
- In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust spice level to taste.
- In a large skillet, heat enough vegetable oil to cover the bottom of the pan over medium-high heat until shimmering.
- Fry the breaded salmon bites in batches for 2-3 minutes on each side until golden brown and crispy. Use a slotted spoon to remove and drain on paper towels.
- Arrange the cooked salmon bites on a serving platter. Drizzle with Bang Bang sauce or serve on the side. Garnish with chopped cilantro.
- Serve immediately while hot and crispy.
