Description
This Air Fryer Breakfast Potato Hash combines crispy, golden potatoes with vibrant veggies and hearty beef, all cooked to perfection in the air fryer. It’s a healthier twist on a classic breakfast favorite that’s bursting with flavor and color.
Ingredients
- Russet or Yukon Gold potatoes
- Red bell peppers
- Green bell peppers
- Yellow onion
- Paprika
- Garlic powder
- Salt
- Pepper
- Cayenne pepper (optional)
- Dried herbs (thyme or rosemary, optional)
- Ground beef or cooked sausage
- Black beans (optional for vegetarian)
- Olive oil or avocado oil
Instructions
- Start by washing and peeling the potatoes. Then, chop them into small cubes, about half an inch in size.
- Soak the cubed potatoes in cold water for about 30 minutes to get rid of excess starch and achieve a crispy texture. After soaking, drain and pat them dry with a kitchen towel.
- In a large bowl, toss the dried potatoes with olive oil, paprika, garlic powder, salt, and pepper until they are evenly coated.
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Place the seasoned potatoes in the air fryer basket in a single layer, ensuring they aren’t overcrowded. Cook for 15 minutes, shaking the basket halfway through.
- After the first 15 minutes, add chopped bell peppers, onions, and your choice of protein to the basket. Toss gently and cook for another 10-12 minutes until everything is browned and crispy.
- Once done, remove the hash from the air fryer and taste. Adjust seasoning if necessary. Serve warm, garnished with fresh herbs or avocado slices.

Keywords: Make sure all your potato cubes are of similar size for even cooking. Soaking the potatoes is key for achieving that perfect crispy texture. Feel free to switch up the spices and consider topping your hash with sour cream, salsa, or avocado for added flavor.
