  • 1 teaspoon of garlic powder

  • 1/4 teaspoon of cayenne pepper (optional)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the 8 ounces of pasta and cook according to package instructions until al dente (8-10 minutes), stirring occasionally.
  3. Reserve 1 cup of pasta water, then drain the rest in a colander and set the pasta aside.
  4. In a large saucepan, melt 2 tablespoons of unsalted butter over medium heat.
  5. Once melted, whisk in 2 tablespoons of all-purpose flour for 1-2 minutes to create a roux.
  6. Gradually pour in 2 cups of whole milk while whisking to avoid lumps. Continue whisking until the mixture thickens (about 3-5 minutes).
  7. Reduce heat to low and stir in 1 cup of shredded white cheddar cheese and 1/2 cup of grated Parmesan cheese until melted and creamy.
  8. Season the sauce with 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and salt and pepper to taste. Add 1/4 teaspoon of cayenne pepper if desired.
  9. Add the drained pasta to the cheese sauce and gently toss until well coated. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
  10. Let the pasta sit in the sauce on low heat for a minute or two to meld flavors.
  11. Serve the creamy white cheddar pasta in generous portions, garnished with freshly chopped parsley.
