  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil over high heat.
  2. Add the fettuccine pasta to the boiling water and cook according to package instructions (about 8-10 minutes) until al dente. Stir occasionally to prevent sticking.
  3. Reserve about 1 cup of pasta water, then drain the pasta in a colander. Drizzle with a little olive oil to prevent sticking.
  4. While the pasta cooks, season the sirloin steak strips generously with salt and pepper.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until hot but not smoking.
  6. Add the seasoned steak strips in a single layer. Sear for 2-3 minutes without moving, then flip and cook for another 2-3 minutes until browned and cooked to your desired doneness. Remove from skillet and cover loosely with foil.
  7. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  8. Pour in 1 cup of beef broth, scraping the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes to reduce slightly.
  9. Slowly add 1 cup of heavy cream, stirring continuously to create a rich sauce.
  10. Stir in 1 teaspoon of Italian seasoning and adjust seasoning with salt and pepper. Simmer for another 3-5 minutes until slightly thickened.
  11. Gradually whisk in 1 cup of grated Parmesan cheese until melted and smooth. If too thick, add reserved pasta water to reach desired consistency.
  12. Toss the drained fettuccine in the sauce until well coated. Add more reserved pasta water if needed.
  13. Slice the rested steak into bite-sized pieces and add back to the skillet. Gently toss to combine.
  14. Taste and adjust seasoning if necessary. Add more Italian seasoning or red pepper flakes for extra flavor if desired.
  15. Use tongs to twirl a generous portion of the creamy steak pasta onto each plate.
  16. Sprinkle with freshly chopped parsley and additional grated Parmesan if desired.
