Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup cold unsalted butter, cubed
- 1 cup shredded sharp cheddar cheese
- 3/4 cup buttermilk
- 1 cup lump crab meat, picked over for shells
- 1/4 cup cream cheese, softened
- 1 tablespoon Worcestershire sauce
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh parsley, chopped (plus more for garnish)
- 1/4 cup melted butter (for brushing)
- 1/2 teaspoon Old Bay seasoning (for topping)
Instructions
- In a large mixing bowl, combine the flour, baking powder, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Whisk until well mixed.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs with small pea-sized pieces of butter.
- Stir in the shredded cheddar cheese until evenly distributed.
- Pour in the buttermilk and gently mix with a spatula until just combined. The dough should be slightly sticky with a few lumps.
- In a separate bowl, combine the lump crab meat, softened cream cheese, Worcestershire sauce, lemon juice, and chopped parsley. Gently fold together, keeping the crab lumps intact.
- Season the crab mixture with a pinch of salt and pepper. Add hot sauce or Old Bay seasoning if desired.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Drop about 1/4 cup of biscuit dough onto the prepared baking sheet, leaving space between each mound.
- Create a small well in the center of each biscuit mound.
- Spoon about 1 tablespoon of the crab mixture into each well, covering it with biscuit dough from the sides.
- Use remaining biscuit dough to seal any exposed crab filling.
- Brush the tops of the biscuits with melted butter.
- Sprinkle Old Bay seasoning on top of each biscuit.
- Bake for 15-20 minutes, or until golden brown and cooked through. Check for doneness with a toothpick.
- Let the biscuits cool on the baking sheet for about 5 minutes before transferring to a wire rack.
- While the biscuits cool, prepare a simple garlic butter to brush on top (optional).
Notes
- For added flavor, consider mixing in some chopped green onions or additional herbs into the crab filling.
- These biscuits are best served warm and can be reheated in the oven for a few minutes.
