  • Salt and pepper to taste

Instructions

  1. Wash the green beans thoroughly under cold water, trim the ends, and set aside.
  2. Rinse the baby potatoes and halve them for even cooking.
  3. Chop the bacon into small pieces.
  4. Dice the onion and mince the garlic.
  5. In a large skillet or Dutch oven, heat olive oil over medium heat and add the chopped bacon.
  6. Cook the bacon until crispy and golden brown, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels, leaving the drippings in the skillet.

  13. Add the green beans to the skillet, stirring gently to combine.
  14. Cover and cook for an additional 10-12 minutes until the green beans are bright green and tender-crisp.
