  • 1/2 cup Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • 2 large eggs
  • Optional: chopped nuts, raisins, shredded coconut
  • Optional: 2 tablespoons brown sugar for cinnamon sugar swirl

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or lightly grease it.
  2. In a large bowl, combine rolled oats, protein powder, baking powder, baking soda, and cinnamon. Stir well to ensure even distribution.
  3. In another bowl, mix Greek yogurt, unsweetened applesauce, maple syrup, and eggs. Whisk until smooth.
  4. Gradually pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay!
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Place the muffin tin in the preheated oven and bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
