- 1 teaspoon Italian seasoning
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the egg noodles and stir gently to prevent sticking.
- Cook according to package instructions (7-9 minutes) until al dente. Taste a minute or two before the time is up.
- Drain the noodles and set aside, drizzling with a little olive oil to prevent sticking.
- In a large skillet, heat the butter and olive oil over medium heat.
- Once melted and bubbling, add the chicken pieces, spreading them evenly in the pan.
- Season with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Check for doneness by cutting into a piece.
- Remove the chicken from the skillet and cover with foil to keep warm.
- In the same skillet, pour in the chicken broth and scrape up any browned bits from the bottom.
- Bring to a simmer over medium heat and cook for 2-3 minutes to reduce slightly.
- Add the heavy cream and stir to combine.
- Allow the sauce to simmer for another 3-4 minutes, stirring occasionally until it thickens slightly.
- Gradually stir in the grated Parmesan cheese until melted and incorporated. Adjust seasoning with salt and pepper if needed.
- Add the cooked chicken back into the skillet with the sauce and stir to coat.
- Add the drained egg noodles and gently toss until well coated in the sauce.
- If the sauce is too thick, add a splash of chicken broth or pasta water to loosen it up.
