  • 2 tablespoons unsalted butter

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the egg noodles and stir gently to prevent sticking.
  3. Cook according to package instructions (7-9 minutes) until al dente. Taste a minute or two before the time is up.
  4. Drain the noodles and set aside, drizzling with a little olive oil to prevent sticking.
  5. In a large skillet, heat the butter and olive oil over medium heat.
  6. Once melted and bubbling, add the chicken pieces, spreading them evenly in the pan.
  7. Season with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  8. Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Check for doneness by cutting into a piece.
  9. Remove the chicken from the skillet and cover with foil to keep warm.
  10. In the same skillet, pour in the chicken broth and scrape up any browned bits from the bottom.
  11. Bring to a simmer over medium heat and cook for 2-3 minutes to reduce slightly.
  12. Add the heavy cream and stir to combine.
  13. Allow the sauce to simmer for another 3-4 minutes, stirring occasionally until it thickens slightly.
  14. Gradually stir in the grated Parmesan cheese until melted and incorporated. Adjust seasoning with salt and pepper if needed.
  15. Add the cooked chicken back into the skillet with the sauce and stir to coat.
  16. Add the drained egg noodles and gently toss until well coated in the sauce.
  17. If the sauce is too thick, add a splash of chicken broth or pasta water to loosen it up.
  18. Remove from heat once everything is combined and heated through.
  19. Plate the chicken buttered noodles in shallow bowls.
  20. Garnish with freshly chopped parsley for color and freshness.
  21. Optionally, add extra grated Parmesan on top.
