  • 2 cups cooked rotini pasta
  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil (if using fresh broccoli)
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Boil a large pot of salted water. Add rotini pasta and cook until al dente. Drain and set aside.
  2. Cook chicken by baking, grilling, or boiling. Shred or dice into bite-sized pieces.
  3. If using fresh broccoli, wash and cut into florets. Sauté in olive oil over medium heat for 5-7 minutes until tender. If using frozen, steam according to package instructions.
  4. For homemade sauce, combine 1 cup heavy cream, 1/2 cup grated Parmesan, 2 tablespoons butter, and 1 minced garlic clove in a saucepan over medium heat. Stir until smooth and season with salt and pepper.
  5. In a large bowl, mix cooked pasta, chicken, and broccoli.
  6. Pour Alfredo sauce over the mixture. Add garlic powder, Italian seasoning, salt, and pepper. Stir until evenly coated.
  7. Fold in half of the mozzarella and Parmesan cheese.
  8. Preheat to 350°F (175°C).
  9. Grease a 9×13 inch baking dish with olive oil or cooking spray.
  10. Pour the pasta mixture into the baking dish, spreading evenly.
  11. Sprinkle remaining mozzarella and Parmesan over the top. Add breadcrumbs if desired.
  12. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  13. Ensure cheese is melted and slightly browned; add 5 more minutes if needed.
  14. Allow to sit for 5-10 minutes before serving.
  15. Cut into squares and serve warm, optionally garnished with fresh parsley or basil.
  16. Add chopped fresh herbs for color and freshness (optional).
