Ingredients

  • Fresh or frozen cheese tortellini
  • Ground beef
  • Taco seasoning
  • Canned black beans
  • Shredded cheddar cheese
  • Monterey Jack cheese
  • Tomato sauce or crushed tomatoes
  • Sour cream
  • Bell peppers

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions. Drain and set aside.
  3. In a large skillet over medium heat, brown the ground beef until it’s fully cooked. Drain any excess fat.
  4. Toss in diced bell peppers and cook for about 3-4 minutes until they start to soften.
  5. Stir in the black beans and taco seasoning. Mix well and cook for another 2 minutes to allow the flavors to meld.
  6. In a large mixing bowl, combine the cooked tortellini, beef mixture, and half of the cheese. Gently stir in the tomato sauce until everything is evenly coated.
  7. Pour the tortellini mixture into a greased 9×13-inch baking dish. Spread it evenly, then dollop the sour cream on top.
  8. Sprinkle the remaining cheese over the top of the dish, covering it generously.
  9. Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
  10. Once done, remove from the oven and let it cool for a few minutes. Serve hot, garnished with fresh cilantro or extra sour cream if desired.
