Ingredients
- Fresh or frozen cheese tortellini
- Ground beef
- Taco seasoning
- Canned black beans
- Shredded cheddar cheese
- Monterey Jack cheese
- Tomato sauce or crushed tomatoes
- Sour cream
- Bell peppers
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef until it’s fully cooked. Drain any excess fat.
- Toss in diced bell peppers and cook for about 3-4 minutes until they start to soften.
- Stir in the black beans and taco seasoning. Mix well and cook for another 2 minutes to allow the flavors to meld.
- In a large mixing bowl, combine the cooked tortellini, beef mixture, and half of the cheese. Gently stir in the tomato sauce until everything is evenly coated.
- Pour the tortellini mixture into a greased 9×13-inch baking dish. Spread it evenly, then dollop the sour cream on top.
- Sprinkle the remaining cheese over the top of the dish, covering it generously.
- Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Once done, remove from the oven and let it cool for a few minutes. Serve hot, garnished with fresh cilantro or extra sour cream if desired.
