Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup fresh spinach leaves
- 1 cup diced tomatoes
- 1/2 cup ranch dressing (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness on a cutting board.
- In a small bowl, mix minced garlic, garlic powder, onion powder, paprika, salt, and pepper.
- Rub the seasoning mix over the chicken breasts evenly.
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before slicing it into thin strips.
- In a medium bowl, combine shredded mozzarella and cheddar cheese. Optionally, mix in a pinch of garlic powder or fresh herbs.
- Lay a tortilla flat and place sliced chicken in the center. Top with cheese mixture, spinach, tomatoes, and ranch dressing if desired.
- Fold the sides of the tortilla inwards and roll it up from the bottom to the top.
- Repeat with remaining tortillas and fillings.
- In the same skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Place wraps seam-side down and cook for 3-4 minutes on each side until golden brown and crispy.
- Optionally, cover the skillet with a lid for a minute to melt the cheese.
- Remove wraps from the skillet, let cool for a minute, then slice in half to serve.
