Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter, melted
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup milk
  • 1 large egg

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Whisk until well mixed.
  2. In another bowl, mix the melted butter, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, and chopped parsley. Stir until well combined.
  3. In a separate small bowl, whisk together the milk and egg until fully combined.
  4. Pour the milk and egg mixture into the cheese and garlic mixture. Stir until well incorporated.
  5. Gradually add the dry mixture to the wet mixture, folding gently until just combined. Avoid overmixing for light and fluffy bites.
  6. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. Using a tablespoon or small cookie scoop, scoop portions of the dough onto the prepared baking sheet, leaving space between each bite.
  8. Optionally, roll each scoop into a round ball for a uniform look.
  9. Bake in the preheated oven for 15-20 minutes, or until golden brown on top.
  10. Remove from the oven and let cool for a few minutes to firm up.
  11. In a small saucepan over low heat, melt 1/4 cup of unsalted butter.
  12. Add 2 cloves of minced garlic and sauté for 1-2 minutes until fragrant, being careful not to brown the garlic.
  13. Remove from heat and stir in an additional tablespoon of chopped parsley.
  14. Brush the garlic butter mixture generously over each bite.
  15. Optionally, sprinkle leftover Parmesan cheese on top for an extra cheesy finish.
  16. For added color and freshness, sprinkle a little extra chopped parsley on top.
