Scale
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup unsalted butter, melted
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/2 cup milk
- 1 large egg
Instructions
- In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Whisk until well mixed.
- In another bowl, mix the melted butter, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, and chopped parsley. Stir until well combined.
- In a separate small bowl, whisk together the milk and egg until fully combined.
- Pour the milk and egg mixture into the cheese and garlic mixture. Stir until well incorporated.
- Gradually add the dry mixture to the wet mixture, folding gently until just combined. Avoid overmixing for light and fluffy bites.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Using a tablespoon or small cookie scoop, scoop portions of the dough onto the prepared baking sheet, leaving space between each bite.
- Optionally, roll each scoop into a round ball for a uniform look.
- Bake in the preheated oven for 15-20 minutes, or until golden brown on top.
- Remove from the oven and let cool for a few minutes to firm up.
- In a small saucepan over low heat, melt 1/4 cup of unsalted butter.
- Add 2 cloves of minced garlic and sauté for 1-2 minutes until fragrant, being careful not to brown the garlic.
- Remove from heat and stir in an additional tablespoon of chopped parsley.
- Brush the garlic butter mixture generously over each bite.
- Optionally, sprinkle leftover Parmesan cheese on top for an extra cheesy finish.
- For added color and freshness, sprinkle a little extra chopped parsley on top.
