  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1 cup provolone cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by bringing a large pot of salted water to a boil.
  2. Add the cheese tortellini to the boiling water and cook according to package instructions (3-5 minutes) until they float to the top and are tender.
  3. Drain the tortellini and set aside, optionally drizzling with olive oil to prevent sticking.
  4. In a large skillet, heat olive oil over medium-high heat.
  5. Add the ribeye steak, season with salt and pepper, and cook for 3-4 minutes until browned. Remove and set aside.
  6. In the same skillet, add onion, bell pepper, and mushrooms. Sauté for 5-7 minutes until tender.
  7. Stir in garlic and Worcestershire sauce, cooking for an additional 1-2 minutes.
  8. Return the steak to the skillet and mix with the vegetables, cooking for another minute.
  9. Gently fold in the cooked tortellini.
  10. Sprinkle provolone and Parmesan cheese over the mixture, stirring gently to combine.
  11. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
  12. Lower heat to medium-low, cover, and cook for 3-5 minutes until cheese is melted.
  13. If too dry, add a splash of beef broth or olive oil.
  14. Serve the cheesesteak tortellini onto plates.
  15. Sprinkle with freshly chopped parsley.
  16. Serve immediately with a side salad or crusty bread.
