- 1 lb ribeye steak, thinly sliced
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
- 1 cup provolone cheese, shredded
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Start by bringing a large pot of salted water to a boil.
- Add the cheese tortellini to the boiling water and cook according to package instructions (3-5 minutes) until they float to the top and are tender.
- Drain the tortellini and set aside, optionally drizzling with olive oil to prevent sticking.
- In a large skillet, heat olive oil over medium-high heat.
- Add the ribeye steak, season with salt and pepper, and cook for 3-4 minutes until browned. Remove and set aside.
- In the same skillet, add onion, bell pepper, and mushrooms. Sauté for 5-7 minutes until tender.
- Stir in garlic and Worcestershire sauce, cooking for an additional 1-2 minutes.
- Return the steak to the skillet and mix with the vegetables, cooking for another minute.
- Gently fold in the cooked tortellini.
- Sprinkle provolone and Parmesan cheese over the mixture, stirring gently to combine.
- Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
- Lower heat to medium-low, cover, and cook for 3-5 minutes until cheese is melted.
- If too dry, add a splash of beef broth or olive oil.
- Serve the cheesesteak tortellini onto plates.
- Sprinkle with freshly chopped parsley.
- Serve immediately with a side salad or crusty bread.
