  • 8 oz fettuccine pasta
  • 1 lb shrimp, peeled and deveined
  • 1 lb steak (sirloin or ribeye), cut into strips
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine pasta and cook according to package instructions until al dente (about 8-10 minutes), stirring occasionally.
  3. Reserve about 1 cup of pasta water, then drain the pasta and set aside.
  4. In a large mixing bowl, combine shrimp and steak strips. Sprinkle with Cajun seasoning and toss to coat.
  5. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add steak strips in a single layer and cook for 3-4 minutes until browned on one side.
  6. Flip the steak and cook for an additional 2-3 minutes until desired doneness. Remove from skillet and cover with foil.
  7. In the same skillet, add the remaining tablespoon of olive oil. Cook shrimp for 2-3 minutes on each side until pink and opaque.
  8. Add minced garlic and sauté for 30 seconds until fragrant.
  9. Reduce heat to medium-low and pour in heavy cream, stirring to combine with shrimp and garlic.
  10. Simmer for 2-3 minutes, stirring occasionally.
  11. Gradually add grated Parmesan cheese, stirring until melted and creamy. Adjust consistency with reserved pasta water if needed.
  12. Season with salt and pepper to taste.
  13. Add cooked fettuccine to the skillet and toss to coat in the sauce.
  14. Return cooked steak, cherry tomatoes, and spinach to the skillet. Toss gently to combine and wilt the spinach.
  15. If the pasta seems dry, add more reserved pasta water as needed.
  16. Remove from heat and serve in bowls or on plates.
  17. Garnish with freshly chopped parsley and additional Parmesan cheese if desired.
  18. Enjoy with garlic bread or a fresh salad!
