Ingredients
- Boneless, skinless chicken breasts or thighs
- Salt
- Black pepper
- Garlic powder
- Oil or butter (for sautéing)
- Thinly sliced yellow or white onions
- Buffalo sauce (such as Frank's RedHot)
- Provolone cheese or white American cheese
- Hoagie rolls
- Optional: thinly sliced bell peppers
- Optional: Monterey Jack or pepper jack cheese

Instructions
- If you haven't already, thinly slice your chicken breasts or thighs against the grain into small, bite-sized pieces or thin strips. Season the chicken liberally with salt, black pepper, and garlic powder.
- Heat a large skillet or griddle over medium-high heat. Add a tablespoon of oil or butter. Once shimmering, add your thinly sliced onions. Cook, stirring occasionally, until they're softened and translucent, about 5-7 minutes. Remove the onions from the skillet and set them aside.
- Add another tablespoon of oil or butter to the same skillet. Increase the heat slightly to high. Once the oil is hot, add your seasoned chicken in a single layer. Cook for 3-4 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
- Return the cooked onions to the skillet with the chicken. Pour in your buffalo sauce. Stir everything together until the chicken and onions are thoroughly coated in the sauce. Let it simmer for a minute or two.
- Using your spatula, push the saucy chicken and onion mixture into two or three neat piles on the skillet.
- Lay two to three slices of your chosen cheese over each pile of chicken mixture. Cover the skillet with a lid for about 30 seconds to a minute, or until the cheese is melted.
- While the cheese is melting, lightly toast your hoagie rolls.
- Carefully slide your spatula under one of the cheesy chicken piles and scoop it directly into a prepared hoagie roll. Repeat for the remaining sandwiches.
