  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon cinnamon (optional)
  • Whipped cream or vanilla ice cream for serving (optional)

Instructions

  1. In a medium saucepan, combine the fresh blueberries, granulated sugar, lemon juice, vanilla extract, cornstarch, and salt. Stir gently to coat the blueberries evenly.
  2. Place the saucepan over medium heat and cook, stirring occasionally, until the mixture simmers (about 5-7 minutes). The blueberries will release their juices, and the mixture will thicken slightly.
  3. Remove from heat and set aside to cool.
  4. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy (about 3-4 minutes).
  5. Add the egg and mix until well combined.
  6. In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon (if using).
  7. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start with a third of the dry ingredients, mix until just combined, then add half of the milk. Repeat until all ingredients are incorporated, being careful not to overmix.
  8. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  9. Pour half of the batter into the prepared dish, spreading it evenly.
  10. Spoon the blueberry filling over the batter, spreading it out evenly.
  11. Dollop the remaining batter over the blueberry filling, allowing some blueberries to peek through.
  12. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  13. Remove from the oven and let cool for 10-15 minutes before cutting into squares.
  14. Cut into squares and serve warm or at room temperature. Enjoy with whipped cream or vanilla ice cream for an extra treat!
