Instructions
- In a medium saucepan, combine the fresh blueberries, granulated sugar, lemon juice, vanilla extract, cornstarch, and salt. Stir gently to coat the blueberries evenly.
- Place the saucepan over medium heat and cook, stirring occasionally, until the mixture simmers (about 5-7 minutes). The blueberries will release their juices, and the mixture will thicken slightly.
- Remove from heat and set aside to cool.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy (about 3-4 minutes).
- Add the egg and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon (if using).
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start with a third of the dry ingredients, mix until just combined, then add half of the milk. Repeat until all ingredients are incorporated, being careful not to overmix.
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- Pour half of the batter into the prepared dish, spreading it evenly.
- Spoon the blueberry filling over the batter, spreading it out evenly.
- Dollop the remaining batter over the blueberry filling, allowing some blueberries to peek through.
- Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Remove from the oven and let cool for 10-15 minutes before cutting into squares.
