Description

These beef burritos are a delicious combination of seasoned ground beef, creamy refried beans, and melted cheese, all wrapped in warm flour tortillas. Ideal for family dinners or meal prep, they are hearty, satisfying, and easy to customize with your favorite toppings.

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup beef broth
  • 1 can (15 oz) refried beans
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1 cup salsa
  • 1 jalapeño, sliced (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  2. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, stirring frequently to prevent burning.
  3. Increase the heat to medium-high and add the ground beef to the skillet. Use a wooden spoon to break it apart as it cooks. Cook until the beef is browned and no longer pink, about 5-7 minutes.
  4. Once the beef is cooked, drain any excess fat from the skillet.
  5. Sprinkle the taco seasoning over the beef mixture and stir to combine. Pour in the beef broth and bring the mixture to a simmer. Let it cook for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  6. Remove the skillet from heat and set aside the beef filling while you prepare the other components.
  7. While the beef filling is cooling, take a large skillet or griddle and heat it over medium heat.
  8. Warm each flour tortilla in the skillet for about 30 seconds on each side, just until they are pliable and warm.
  9. Once warmed, stack the tortillas on a plate and cover them with a clean kitchen towel to keep them warm.
  10. Take one warm tortilla and lay it flat on a clean surface or plate.
  11. Spread about ¼ cup of refried beans evenly across the center of the tortilla, leaving about 1-2 inches of space at the edges.
  12. Next, spoon a generous amount of the beef filling over the beans, about ½ cup, depending on how stuffed you want your burrito.
  13. Sprinkle a mix of shredded cheddar and Monterey Jack cheese over the beef filling, about ¼ cup total.
  14. If you like a little heat, add a few slices of jalapeño on top of the cheese.
  15. Drizzle a tablespoon of sour cream and a spoonful of salsa over the filling for added flavor.
  16. To roll the burrito, fold the sides of the tortilla inwards over the filling, then starting from the bottom, roll it up tightly until the burrito is fully wrapped.
  17. Repeat the assembly process for the remaining tortillas and filling.
  18. Preheat your oven to 350°F (175°C).
  19. Once all the burritos are assembled, place them seam-side down in a greased baking dish.
  20. If you have any remaining beef filling, you can spoon it over the top of the burritos for extra flavor and moisture.
  21. Sprinkle any leftover cheese on top of the burritos, ensuring they are well-covered.
  22. Cover the baking dish with aluminum foil to prevent the burritos from drying out while baking.
  23. Bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

  • Feel free to customize the fillings with your favorite ingredients, such as black beans, corn, or different types of cheese.
  • These burritos can be made ahead of time and frozen for later use. Just bake them straight from the freezer, adding a few extra minutes to the cooking time.
