- 1 pound bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup sour cream
- 1 cup milk
- 1 package (16 oz) elbow macaroni
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon Worcestershire sauce
- 1/2 cup green onions, chopped (for garnish)
Instructions
- In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes, stirring occasionally.
- Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate to drain excess grease, leaving about 2 tablespoons of bacon grease in the skillet.
- Add the diced onion to the skillet and cook for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute, stirring frequently.
- Add the ground beef, breaking it up with a spatula, and cook until browned, about 6-8 minutes. Drain any excess fat if necessary.
- Stir in the cooked bacon, BBQ sauce, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix well and let simmer for about 5 minutes.
- While the meat mixture simmers, bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes.
- Drain the macaroni and set aside (do not rinse).
- In a medium saucepan, combine the sour cream and milk over medium heat. Stir until well combined and heated through, but do not boil.
- Gradually add the shredded cheddar and mozzarella cheese, stirring continuously until melted and smooth, about 3-5 minutes.
- Season the cheese sauce with a pinch of salt and pepper to taste.
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the meat mixture, cooked macaroni, and cheese sauce. Stir until evenly coated.
- Transfer the mixture into a greased 9×13 inch baking dish, spreading it out evenly.
- Top with any remaining shredded cheese if desired.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole cool for 5-10 minutes before serving.
- Sprinkle chopped green onions over the top for garnish.
- Cut into squares and serve warm. This dish pairs well with a side salad or garlic bread.
