  • 1 cup balsamic vinegar

  • Salt and pepper, to taste

Instructions

  1. In a medium-sized bowl, combine the balsamic vinegar, honey, minced garlic, dried thyme, and dried rosemary. Whisk until the honey is fully dissolved.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Place the seasoned chicken in a large resealable plastic bag or shallow dish. Pour the balsamic marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish.
  4. Refrigerate for at least 30 minutes, preferably 2-4 hours or overnight for best results.
  5. After marinating, remove the chicken from the refrigerator and let it sit at room temperature for about 15 minutes.
  6. In a large skillet, heat the olive oil over medium-high heat. Add the marinated chicken breasts carefully.
  7. Cook for about 5-7 minutes on one side without moving it to form a nice sear.
  8. Flip the chicken, reduce heat to medium, and pour half of the remaining marinade into the skillet. Cover and cook for another 5-7 minutes, or until the internal temperature reaches 165°F (75°C).
  9. Remove the chicken from the skillet and cover loosely with aluminum foil to keep warm.
  10. In the same skillet, add the reserved marinade and bring to a boil over medium-high heat, scraping up any browned bits.
  11. Reduce heat to medium-low and let simmer for 5-10 minutes until thickened, stirring occasionally.
  12. Taste and adjust seasoning if necessary, adding more honey for sweetness if desired.
  13. Place the cooked chicken on a serving platter and drizzle generously with the balsamic glaze. Garnish with chopped fresh basil if desired.
