Instructions
- In a medium-sized bowl, combine the balsamic vinegar, honey, minced garlic, dried thyme, and dried rosemary. Whisk until the honey is fully dissolved.
- Season the chicken breasts with salt and pepper on both sides.
- Place the seasoned chicken in a large resealable plastic bag or shallow dish. Pour the balsamic marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish.
- Refrigerate for at least 30 minutes, preferably 2-4 hours or overnight for best results.
- After marinating, remove the chicken from the refrigerator and let it sit at room temperature for about 15 minutes.
- In a large skillet, heat the olive oil over medium-high heat. Add the marinated chicken breasts carefully.
- Cook for about 5-7 minutes on one side without moving it to form a nice sear.
- Flip the chicken, reduce heat to medium, and pour half of the remaining marinade into the skillet. Cover and cook for another 5-7 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the skillet and cover loosely with aluminum foil to keep warm.
- In the same skillet, add the reserved marinade and bring to a boil over medium-high heat, scraping up any browned bits.
- Reduce heat to medium-low and let simmer for 5-10 minutes until thickened, stirring occasionally.
- Taste and adjust seasoning if necessary, adding more honey for sweetness if desired.
- Place the cooked chicken on a serving platter and drizzle generously with the balsamic glaze. Garnish with chopped fresh basil if desired.
