Instructions
- In a medium-sized bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper. Whisk until well blended.
- Taste the marinade and adjust seasoning if necessary.
- Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is well coated.
- Cover the dish with plastic wrap or seal the bag tightly. Refrigerate for at least 30 minutes, preferably 1 to 2 hours.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Remove the salmon from the refrigerator and let it sit at room temperature for about 10 minutes.
- Place the marinated salmon fillets on the prepared baking sheet, skin-side down. Drizzle any leftover marinade over the fillets.
- Arrange lemon slices on top of each fillet.
- Bake the salmon for 12 to 15 minutes, depending on thickness. Check for doneness by flaking the thickest part with a fork; it should be opaque and flake easily.
- Once done, remove from the oven and let it rest for 5 minutes.
- Transfer to a serving platter and garnish with chopped parsley and additional lemon slices.
