Instructions

  1. In a medium-sized bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper. Whisk until well blended.
  2. Taste the marinade and adjust seasoning if necessary.
  3. Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is well coated.
  4. Cover the dish with plastic wrap or seal the bag tightly. Refrigerate for at least 30 minutes, preferably 1 to 2 hours.
  5. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  6. Remove the salmon from the refrigerator and let it sit at room temperature for about 10 minutes.
  7. Place the marinated salmon fillets on the prepared baking sheet, skin-side down. Drizzle any leftover marinade over the fillets.
  8. Arrange lemon slices on top of each fillet.
  9. Bake the salmon for 12 to 15 minutes, depending on thickness. Check for doneness by flaking the thickest part with a fork; it should be opaque and flake easily.
  10. Once done, remove from the oven and let it rest for 5 minutes.
  11. Transfer to a serving platter and garnish with chopped parsley and additional lemon slices.
  12. Serve with your choice of sides, such as roasted vegetables, quinoa, or a fresh salad.
